Novels about Cortez and the Conquest dominate the Latin America page at HistoricalNovels.info. There are several about La Malinche, the native woman who was Cortez's translator and mistress, and quite a few that give the native perspective of the Conquest. The only one I've read, though, was Gary Jennings' Aztec, which I didn't care for (as a novelist, Jennings is really into aberrant sexual behavior, and not in a happy-go-lucky way, though Aztec is a bit milder in this regard than some of his other novels, if I recall correctly).

There's a mystery series featuring an Aztec scribe in pre-Conquest times; I read the first in the series, and rather enjoyed it.

Just came across another one- "Children of the Sun: the Fall of the Aztecs" (2009), by Elizabeth Manson Bahr.
