I purposely didn't put this in the Russia section. At the moment I can only think of Taras Bulba and Sienkiewicz's Deluge. Any others?
I know there are many books that take place in the Jewish Pale (between Ukraine and Poland), but they are usually about the Jewish community, not Ukraine itself.

I'll mention Russka by Edward Rutherfurd because I remember reading more detailed history of Kiev/Kyiv than in any other novel. Although this novel is usually centered on a farming community between the Dnieper and Don at the edge of the steppes, I still enjoyed the saga of Kieven Rus and then about greater Russia. I do believe Ukraine plays a certain large role in Russka.
